The Perfect Snack

Well my jaw and neck have now started to swell from my lovely wisdom tooth. I have an appointment on Friday to get my x-rays, and I'm hoping to get it (possibly them?) taken out sometime soon after that! And I'm hoping the dentist can give me something to ease the pain a little bit. It's to the point where I can't even eat normal food that you have to chew :-P

Anyway, it's exhausting being in severe pain 24/7. Seriously, I am so tired, and all I want to do is lie down. Which I will probably do for a good portion of tonight.

Needless to say, this post is not going to be very long. However, I couldn't let another day go by without sharing this delicious recipe! I made it for Luke's birthday party on Saturday, and it was a hit! There was not a drop of it left when the evening was over. Maybe I should have doubled the recipe!

Anyway, here it is: the PERFECT recipe for your next party.

Buffalo Chicken Dip
It's a little spicy, but it's mellowed out a lot by the Ranch dip and cream cheese. It's so rich and delicious! Seriously, I have not met one person that doesn't love this stuff! You can serve it with chicken-flavored crackers, or tortilla chips. It's delicious either way.

Here's the recipe, in case you're interested! I copied and pasted it from allrecipes.com. So unfortunately, no, I can't take credit for the recipe!

Buffalo Chicken Dip

Ingredients:
  • 2 (10 ounce) cans chunk chicken, drained
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup Ranch dressing
  • 3/4 cup pepper sauce (such as Frank's Red Hot®)
  • 1 1/2 cups shredded Cheddar cheese
  • 1 bunch celery, cleaned and cut into 4 inch pieces
  • 1 (8 ounce) box chicken-flavored crackers
Directions:
  1. Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.
So there you have it. It's easy and oh so delicious! Just don't do what I did...don't misread the recipe and think that you only need 1 package of cream cheese. You need 2. I had to stop in the middle of making this dip, drive to the nearest grocery store (a 10 minute drive - we live in the middle of nowhere), pay an obscene amount of money for cream cheese, rush home, and finally finish the recipe. Did I mention that this all happened 45 minutes before Luke's party started? Yeah, I was a little frazzled. I wish I could say that I don't do things like that all the time, but the sad thing is that I DO. Oh well, it's just the way God made me :-)

Have a fabulous Tuesday! And please take a tip from me: as soon as you start having MINOR discomfort in the tooth area, GO TO THE DENTIST! Don't wait a year like I did until it becomes absolutely unbearable! I've learned my lesson. And now I will step down from my soapbox :-)

  1. Wow, you'll probably get yours out before mine (even though my consult was first)! At least you should, because it sounds like you're in way more pain! You say they started hurting a year ago?
    The recipe looks really good - I'll have to try that one the next time we do a party!

  2. The dip looks really good! I used to eat those chicken flavored crackers all the time-I can't find them here anymore. I hope your mouth feels better!!!!

  3. Well, they started hurting off and on for a year. It would hurt for a few days and then be fine for a month. But I waited too long, because now I'm in constant pain! Like I said, I've learned my lesson!
